Healthier Oatmeal Cookies

Afternoon tea (read: I drink coffee but it is called tea) is the best. On rainy days I think it is awesome coming home and cuddling up on the couch with some home baked whatever (in this case cookies), and a cup of deliciousness from Enghave Kaffe, which is by far the best coffee in Copenhagen. This is what I did yesterday, and the cookies I made was made with ingredients I had laying around already. I had one of those days where I did not want to leave the apartment after coming home.
The Goodies:
- 1 medium banana (130gr)
- 1 dl almonds
- 1 dl oats (choose gluten-free if you want that)
- 1 dl coconut flour (you could use another dl of oats)
- 1 egg
- 1 tbsp honey (optional)
- 30gr melted butter
- 50gr 80% dark chocolate (choose sugar-free if you want no added sugar in this)
The How:
- Turn your oven onto 170°C over and under heat
- Melt the butter over low heat
- While the butter is melting throw almonds, oats, coconut flour, the egg, honey and the banana in a blender
- Add the melted butter and blend the mixture all together
- Chop the chocolate and add to the batter
- Place a baking sheet on the baking pan and create your cookies at the size you desire – I made 6 decent size cookies from this recipe
- Bake in the oven for 20-25 minutes, or until they have a slightly golden look to them
- Make yourself a good cup of coffee, put on Game of Thrones, and eat some cookies
