Greenie Breakfast Bowl with Homemade Granola

Greenie = Veggies = Good
Vegetables are hard in include in your breakfast, right? I have always found it tough. This past weekend I decided to try a green breakfast bowl, and to include spinach and zucchini. In smoothies I have tried to include broccoli and avocado previously, and once in a while it just does not work. They turn out bitter… but in this case… nailed it. This greenie was the perfect blend of sweet and bitter (even if I was hungover while consuming it!). To top this breakfast bowl off I “decorated” it with my homemade banana granola (you could use this one too), and blueberries.
A little bit about blenders…
I would like to highlight the importance of a good blender when making these bowls. I do not have one myself, and it complicated the process quite a bit. Any of the “top” blenders: Kitchen Aid, Blendtec, Vitamix, is the best choice when investing in such a kitchen beast. Personally, there is hope that our kitchen might be enriched with for at our wedding in September (fingers crossed). One would think I am advertising for these blenders, but in reality I just find them amazing and want one.
The recipe below is enough for two medium sized portions or one big.
The Goodies:
All of the below should be in bite-sized pieces.
- 150 g frozen spinach
- 150 g frozen mango
- 1 frozen banana
- 1 zucchini
- Milk (add until desired texture)
- 1 tsp cinnamon (can be left out)
- 1 tsp liquorice powder (can be left out)
- Toppinga: Granola, blueberries, whatever you like
The How:
- Chop all the fruit and vegetables into the sizes deemed fit to blend (the frozen items should be cut prior to freezing)
- Add to blender – blend
- Decorate in a bowl
- Eat up 🙂
The granola you see in the picture is a banana-roasted version I made, and not the one I liked to at the top here. Either of them are good. The banana version has more of a müsli feel to it, whereas the linked-to one is more crunchy. A bought one works magic too! I truly hope you like this breakfast dealeo.
