Chocolate Banana Brunch Waffles

Remember how we loooove brunch in our home? Well today was another example of that (actually yesterday was too, but today we decided to make it ourselves). We have been off work and school for the last couple of days, which means this weekend is a four-day one (yay!). Yesterday we had brunch at Mad & Kaffe on Vesterbro. Great place, amazing staff, and delicious food. I have nothing but good stuff to say about that place. If you get the chance go!

Mad & Kaffe pick’n’mix brunch

Other than bragging about the good stuff I ate yesterday – look above, I want to brag about today. Today’s menu consisted of chocolate banana waffles, a soft boiled egg, a greenie smoothie, fresh fruit, and coffee… of course. The coffee is Nicolai’s job, and he does it damn well. The rest we juggle between us. Here is the recipe for the waffles and smoothie (for the next time you are brunching at home).

The Goodies:

Waffles

  • 3 eggs (size medium)
  • 2 ripe bananas
  • 1 dl oats
  • 1/2 coconut flour
  • 1 tbsp good quality cocoa
  • 1 tbsp honey
  • A pinch of salt
  • Coconut oil

Smoothie

  • 1 tropical fruit mix packet (bought frozen with pineapple, papaya, mango)
  • 3 handfuls of fresh spinach
  • Milk
  • Chiaseeds

The How:

Waffles

  1. Mash the banana with a work
  2. Whip in with the remaining ingredients
  3. Turn on waffle iron and put some coconut oil in
  4. Make 4 waffles (approximately)

Smoothie

  1. Blend it all (easy peasy)

As mentioned earlier we served this with soft boiled eggs (place eggs in boiling water for 7 minutes), fresh fruit (strawberries and a pear), and black coffee. Raving success and happy stomachs. I chose not to add protein powder to the waffles or in the smoothie as I wanted my shake later that day. The waffles are quite sweet, and thus do not need any sirup or honey, but if you hav a sweet tooth, give it a go! These waffles could easily be made grain and gluten free is you substitute the oats with almond flour. I imagine that would taste very well too. Let me know how you like these!
