Delicious turkey, bell pepper and leek pie with cottage cheese

We haven’t had pie in forever at home. It is really a shame since a savoury pie is 1) easy to make, 2) it is a great way to empty your fridge and 3) it tastes good.

This pie is filled with veggies and goodies

In general, when serving a savoury pie I always add a side of grated carrots with a few raisins mixed it. It gives some extra filling and contains a variety of vitamins:

  • A
  • C
  • D
  • B12
  • B6

… and I could go on. Raisins, well they taste good. You can leave them out if you do not eat dried fruit 😉

The Goodies:

Servings: 2 people without a side or 3 people with a side

  • Pie crust from this recipe
  • Follow steps 1 through 5 and 10 through 12
  • 2 leeks
  • 1 red bell pepper
  • 250 g turkey bacon bits (uncooked)
  • 1/2 zucchini
  • 200 g cottage cheese
  • 2 eggs
  • 1 1/2 dl milk
  • Grated mozzarella
  • Salt and pepper
  • Olive oil
  • Sides: Grated carrots

The How:

  1. Turn your oven to 180°C
  2. Make your pie crust from recipe link above
  3. While the crust sits in the fridge for at least 30 minutes move onto preparing your filling
  4. Chop all vegetables into small bite sized pieces: Leek, bell pepper, zucchini
  5. Add to a pan with olive oil and fry for 5-10 minutes
  6. In a bowl, mix eggs, milk and cottage cheese and add salt and pepper
  7. Once your pie crust has been pre-baked for 10 minutes (after sitting for 30 minutes) add the turkey bacon bits and vegetables to it
  8. Pour your milk/egg/cheese mixture over
  9. Drizzle with mozzarella
  10. Bake for approximately 40 minutes
  11. Serve with grated carrots (if you want to)

This piece of deliciousness freezes well, and can be made as a meal-preparation idea. I would actually think that this could be used for your kids lunch-box, and they would love you for it! You can really mix and pick whatever vegetables you like using, so try searching your fridge… you might just find a combination that beats mine! Enjoy!
