One Pot Pasta with Salmon, Mushrooms and Broccoli

Joining the One Pot Pasta craze

For some time now I have been wanting to try out a new easy pasta-dish. Lately, a lot of One Pot ideas have popped up, and I have been slightly lost on which one to try. Until now! Mid-way through playing “empty my fridge and figure out what you can have for dinner” it occurred to me that I had everything I needed to test out the pot-craze. So this recipe is really just me trying out new stuff and getting lucky with the flavour ?.

I did not regret my decision to try this out. The dish was filled with flavour and had the creaminess I enjoy. Also, cooking for one person can be boring and tedious, but I will most definitely return to this one.

The Goodies:

Serving size: 1 

Time: 30 minutes

  • 60 g wholegrain pasta penne
  • 1/4 broccoli head
  • 4 – 5 mushrooms
  • 1/2 red onion
  • 1 garlic clove
  • 2 dl vegetable broth
  • 1 tbsp olive oil
  • 1 handful of scallions
  • 4 cherry tomatoes
  • 1 tbsp butter
  • 1 tbsp sun-dried tomatoes (I use the ones on glass in oil)
  • 75 gr smoked and peppered salmon
  • 1 tsp garden vegetable philadelphia
  • Fresh basil (a small handful), oregano, thyme, salt and pepper
  • Grated mozzarella

The How:

  1. Chop up all vegetables to desires size
  2. Add all ingredients but salmon, cream cheese and mozzarella, to one big (or small) pot
  3. Bring the mass to a boiling point and place a lid on it
  4. Turn the heat down and let it simmer for around 13 – 15 minutes
  5. Mix in cream cheese and salmon
  6. Serve and drizzle with some grated mozzarella or whichever topping you prefer

Easy peasy lemon squeezy. I hope you enjoy it as much as I did. Also, do not be afraid to your your spices here (basil, oregano, thyme, salt and pepper), it really helps out the dish if you use it and add it in step 1. This dish could just as easily have been made with serrano ham or even bacon.
